AS 2021 draws to a close and Hong Kongers are resigned to staying put due to the current quarantine measures in place (mandatory two or three weeks of quarantine in a designated hotel at personal expense at the time of writing), we look back over one of the most challenging years for the F&B industry and a few of its success stories.
The 2021 Michelin Star Awards was announced in January and revealed seven three-star restaurants, 12 two-star restaurants and 50 one-star restaurants. This year also included the new ‘Green star’ category, highlighting restaurants using sustainable practices.
Winner of the Green star award and already holding a Michelin star, Roganic opened in early 2019 by restaurateur and chef Simon Rogan and serves top-notch British fare with superb local ingredients.
Rogan is known for his two-Michelin-starred restaurant L’Enclume in Cartmel in the Lake District, which won Best Restaurant in Britain for four consecutive years. In October, it announced a ‘Friends with Sustainability’ series to join forces with the city’s hospitality leaders and raise awareness of sustainable practices in restaurants.
The initiative kicks off with the Roganic x Whey x Ando x Grassroots Initiatives lunch, followed by a Zero Waste Cocktail Dinner with Darkside and a finale dinner celebration of Local Heroes to wrap up the month.

French-inspired Hollywood favourite, Tate Dining Room not only received its second Michelin star this year but also crowned owner and chef Vicky Lau as the only female chef in Asia to be awarded two Michelin stars.
A former graphic designer who switched mid-career to train as a chef, Vicky Lau opened Tate in 2012 and it’s still going strong today, with an eight-course French Cantonese fusion menu called ‘Edible Stories’.

Vicky also won ‘Best Female Chef in Asia’ in 2015 and is seen as a shining light for other female chefs who are often overlooked in this part of the world.

Winning its third Michelin star for the six year, T’ang Court, the Cantonese flagship restaurant at The Langham Hotel is one of Hong Kong’s success stories, especially since hotels have been closed on and off for most of 2020 and 2021 and some have been converted into government quarantine hotels.
Offering a fine selection of authentic Cantonese delicacies, T’ang Court has been a Michelin-starred restaurant since 2009 when the guide first launched in Hong Kong and Macau and has retained its three Michelin-starred status since 2016.
Chinese Master Chef, Kwong Wai Keung, who has been in T’ang Court since it opened in 1988, and Executive Chef, Wong Chi Fai, who has been with the restaurant for nearly two decades have jointly led the team in maintaining the highest culinary standards and making T’ang Court one of Hong Kong’s most iconic restaurants.
